Christmas Turkey

 

 

Ingredients

1 whole turkey, about 5 kilos
Butter , melted
4-5 strips of  bacon
Salt and pepper
and for the stuffing:
1 medium size onion chopped
2-3 tbsp of oil
1/2 cup of glazed rice
6-7 chestnuts ( slightly boiled, peeled and cut to small pieces)
1/4 of a cup of raisins
the liver of the Turkey cut in small pieces
Salt, pepper and cinnamon
3/4 cup of water

 

Preparation:

Rinse the  turkey, with cool water, pat dry with paper towels and rub the  turkey lightly with salt and pepper.

Fill the neck with stuffing first and fasten the neck skin to the back of the turkey with a skewer. Fold the wings across the  front so the tips are touching and tie  with a piece of cooking strip . Fill the belly lightly with stuffing( not to much because  the stuffing  it will expand during roasting. Tuck the drumsticks in front and tie .

Place the turkey, breast side up in a dip roasting pan. Brush with melted butter  and place the bacon strips over the breast of the turkey,  fold the turkey in cling film, add some water  in your pan (1-2 cups ), place a tent of aluminum foil loosely over the turkey and cook for about 3 to 3, 1/2 hours .Remove the foil cover, after about 1 to 1, 1/2 hours of cooking to brown the skin.

Preparing the stuffing:

Add the oil in a frying pan and stir fry the onion until golden brown,add the turkey liver and cook for about a minute then add the rice, the water, nuts,  raisings salt, pepper and cinnamon and cook by stiring  until all the juice is reduce.

You can enjoy your Turkey at Christmas dinner served with gravy or granberry sauce,roast potatoes and boiled veg.
