Tahini Dip ( Sauce)

Tahini sauce, is made out of sesame seeds. Its a traditional dip, that you will find  in all Eastern countries. We serve it as a sauce in salads, with kebabs in pitta bread or even as a dip with any grill meats, halloumi cheese , grill sausages, chops e.t.c.

What we need:

1 cup tahini (sesame seed paste)

1 tsp crushed garlic                                                                                  

1 tsp of salt ( or more )

2 tablespoons olive oil

1/2 cup of worm water                                                                                                  Sesame seeds

1/2 cup of fresh lemon juice                                                                                                                                                                   Sesame  Plant

Add all the ingredients ( except the oil ) in your mixer and blend well.

Remove from the mixer into a bowl and if sauce is very thick you can add some more worm water, add the olive oil mix and your Tahini dip is ready.

You can keep in the fridge for at least 1- 1,½  weeks.

TZATZIKI ( Yoghurt dip)

What we need:

350g Greek yogurt (or full fat yogurt)

2-3 medium size cucumbers

4 garlic cloves, crushed

extra virgin olive oil

salt and pepper to taste

Leaves of dry mint

How to make it:DSC00096

Grate cucumber using the large holes of your grader, and put in a colander in the sink, or squeeze with your hands to remove excess water, transfer to a bowl. Stir in yogurt, mint, garlic paste,  salt, and drizzle with oil, your tzantziki is ready, you can keep in the fridge for about 3-4 days, serve with salads, grill meat, meat balls or even as a dip with pitta bread.

BBQ – Sauce

 

Ingredients

2 cups ketchupDSC00079

1/4 cup cider vinegar

1/4 cup Worcestershire sauce

1/4 cup firmly  brown sugar

2 tablespoons  yellow mustard

1 tablespoon Tabasco sauce

1 tablespoon of barbecue seasoning 

1/2 teaspoon black pepper

How we make it

Whisk all the ingredients together in a large saucepan and bring to a boil over medium heat. Reduce heat and simmer, by stirring occasionally, until desired thickness, It will take at least 1 hour.

Let your sauce cool completely before you store it in the fridge(which it would last you for about 4 days), or you can freeze it and it will last you for months.
