GEMISTA – ( Staffed tomatoes, Green,Yellow, Red Peppeprs )
WHAT DO WE NEED
- 6 large tomatoes
- 6 peppers ( green, yellow, red )
- 500gr. mincemeat ( pork , beef )
- 1 cup olive oil.
- 1 large onion (finely chopped)
- 1 cup parsley (fresh, minced)
- 1/2 cup. of rice (uncooked)
- 1 tin of peeled tomatoes
- 1/2 cup tomato juice
- 1 pinch cinamon (ground)
- Salt and pepper (to taste)
PREPARATION
Wash the tomatoes and peppers , cut a thin slice of the stem-ends and hollow out the interiors.Keep the tomato pulp and chop it up. heat 1/2 cup of the olive oil and saute the onions and minced meat. Add the tomato pulp, rice, parsley , salt and pepper and simmer untill rice is half cooked
Stuff the tomatoes and peppers, put their lids back on and arrange them in a baking pan, put the rest of the tomato juice over them, add 1/2 a cup of water and cover with silver foil. Bake in a medium heat oven for about an hour.
