ROASTED GIANT BEANS
WHAT DO WE NEED
500 gr. dried giant beans
3/4 of a cup olive oil
4-5 ripe tomatoes
1 small carton of tomato juice
some finely chopped parsley
1 large onions finely chopped
3 -4 garlic cloves
salt and pepper
PREPARATION
From the evening before, put your giant beans in water to soak.
Next morning boil your beans until they are tender and then drain them .
In the meantime you have already chopped your tomatoes,onions,parsley & garlic
add salt & pepper and mix together.
Spread your beans in baking tray ( pan) and pour the tomato mixture plus the tomato
juice over your beans , cover with silver foil.
Bake in a medium oven for about 40 minutes.
You can serve them hot or cold
A very traditional Greek dish.
